Kitchen Works - Chef Training

Kitchen Works is primarily focused on commercial cookery and all sectors within that industry including kitchens, cafes, restaurants, hotels and catering facilities.

The predominant focus of the programme is to support the students directly into the workforce after completion of the programme. It is also to support learners into further education relating to increasing cookery skills and qualifications to support entry into the workforce at a later stage.

Our Kitchen Works programme is unique in that it is run from a fully operational commercial kitchen, developed for people seeking to gain sustainable employment and aspire to professional vocational outcomes.

Training with Tree House has been designed around individual training plans where learners can work through the subjects and training that will benefit them within a workplace. An understanding of management, teamwork and work ethics provides students with an insight into the everyday workings of a workplace. We incorporate a literacy and numeracy component in our training with a focus on workplace applications. We aim to provide education opportunities to assist with developing long term careers and personal independence.

The other main areas of skill development in the programme content include health and safety legislation; minimise wastage; handle and maintain knives; clean food production areas and equipment, cutlery, crockery, and glassware; practice food safety methods; provide customer service and establishment information; and maintain a safe and secure environment. The learner will also have demonstrated knowledge of the hospitality industry, basic employment law, commercial cookery methods, and food contamination hazards and the methods used to control them in a commercial kitchen.

The educational component is designed to allow students the ability to achieve each certificate with "manageable" rates of learning and regular achievements.

  • NZQA Unit standard electives in Cookery up to Level 4 linked to student specified career
